Not a lot to report in terms of changes, honestly. The Onyxia loot isn't that stellar for cats, and you shouldn't be super thrilled to get it.
On a side note, my personal DPS has gone way down compared to others recently. Part of that is the reprioritization of gear that I've done for bear; most of my good pieces have been converted to bear pieces and regemmed appropriately. Part of it is that I'm rusty. But a big part is the hit armor pen took. I'm still doing okay, mind you - but I'd definitely consider not stacking armor pen as the big win unless you have some odd non-ToC pieces around to do so.

Won't lie here, I came to the same conclusion last week myself. I regemmed everything towards agility (in some cases even strength) just because the raw ap in comparison to others in my raid just wasn't cutting it anymore. Before I sat around 850 arp fully fed/elixered for it despite no arp proc trinket, but with the new changes I've gone from consistently 10th to top 5 on the fights where I dps now.
Plus seeing 11k ap with 58% crit is hottt
Agi to circa 55% crit then gem for STR?
Rewts, I'm not sure that I'll be regemming agi; there are other mitigating factors in me sucking. But it's certainly the case that without runestone, arpen is not nearly as attractive to stack.
Anon, I would never, ever recommend gemming for strength. Even post 55% (or really post 65%) crit is going to be awesome. Some random tests I've run show that around 70% crit, you can start doing some really weird things with your cycle, like fitting in 2 FBs between SR and Rip.
This might be a cat question, but I was wondering your thoughts on your lists for bears and wasn't sure if you were still checking the comments there.
Tanking is my offspec, so my tank set gets hand-me-downs from the cat set. So no 258 tier for me on that front until Icecrown. Getting 4pcT9 with tokens is more than possible though. So I was wondering, do you rank the crafted chest so high because of the 3 sockets or the hit? I was considering using offset shoulders instead. I could stand to lose the hit from the chest slot, not gain it, but that extra socket...

About Crit vs Str.
You probably want to stack Crit until you reach the soft crit cap that is.
100-24-HIT_MISSING-EXP_MISSING-PROCS.
Lets say you are hitcapped but miss 2% expertise for the dodge cap and your proc gives you 6% crit. Your soft crit cap would be 100 - 24 - 0 - 2 - 6 = 68%. The hard crit cap is 76 - you may reach that one without procs (Idol, Trinkets) hit can exp capped. After that one neither White Damage nor Ferocious Bite take any benefit from any further point of AGI or CRIT rating.
Upcoming versions of Rawr will take care about the crit cap that is due to Rend and Tear and Glancings
I think it depends what you define as "a big hit". I don't think my dps has gone up/down recently but I have seen a lot of classes (especially on aoe centric fights) catch up and surpass fdruids, but thats just the nature of the fights in TOC.
I think the key is that if your dps stays relative to the rest of your raid and you are remaining competitive that is what you are aiming for. I'm still stacking arp up to the new 3.2.2 cap and it's working well for me.
Anon1 - I rank the crafted chest that highly almost entirely because of the socket. The hit is actually not that great because it's simply everywhere.
Anon2 - after you get enough crit via agi I'd still recommend going for arpen over strength.
